我們大家都愛吃麵。如果你想吃得健康卻沒有很多時間下廚的話,煮麵就是最理想不過的選擇了。
可是很多時候,當肚子餓了,需要一頓簡易、美味而富營養的快餐那一刻,也不是每個人會下意識地想起要下些麵來充飢。
但為甚麼不會呢?
We're all wild about noodles. They are perfect if you are trying to eat a little more healthily but don't have a lot of time to spend in the kitchen.
However, it seems that noodles are not the first thing many people think of when they are hungry and are in need of a tasty and quick meal.
But why not?
其實只要把麵或河粉放進美味的湯液中,配點新鮮蔬菜、海鮮或肉片,前後只需 15 分鐘時間,一碗色香味全,熱呼呼的湯麵便被端到桌上!
它們不但好吃,還非常健康;又是豐富的複合式碳水化合物,低脂肪和不含添加劑。
Noodles and a delicious broth served with some fresh vegetables, seafood or meat is an enjoyable, simple and stylish to serve meal which is ready to eat in just fifteen minutes!
And they're nothing if not healthy; high in complex carbohydrates, low in fat and essentially free of additives.
除此之外,一碗麵給人的感覺是那麼的清爽 ; 吃後讓人感到滿足和精力充沛。
我們已很久沒有吃牛肉了,前幾天老公說想吃牛肉麵,我姑念他很勤力的替我把花園收拾整齊,便給他煮一大碗讓他吃個痛快。
不喜歡或不吃牛肉的朋友可以用雞肉或豬肉代替。
What's more, they are also refreshing, invigorating and satisfying.
We haven't been eating a lot of beef lately, so I treated my husband to a big bowl of beef noodle soup for lunch the other day, since he has been doing lots of work in the garden for me!
You can easily substitute the beef for chicken or pork, if you prefer.
簡單美味清湯牛肉河粉
Simple and Delicious Beef Rice Noodles
( 2 人份 ~ Serves 2 )
材料
- 乾沙河粉 250g
- 牛排 2 塊約 300 - 400g,里脊 rib eye 或西冷 Sirloin 都可以
- 新鮮生菜或菠菜
- 蔥粒,去籽椒絲或莞荽作裝飾 ( 隨意)
Ingredients:
- 250g Dried rice stick noodles
- 300 - 400g sirloin or ribeye steak
- fresh iceberg lettuce or spinach
- finely chopped spring onions, deseeded red chilli or coriander to garnish ( optional )
清湯材料:
- 水 1 3/4 公升
- 蔥 2 棵切段,薑 4 片,蒜頭 2 瓣拍扁
- 魚露 2 湯匙,生抽 (醬油) 2 湯匙,米酒 (白酒) 2 湯匙
- 鹽 2 茶匙,糖 2 茶匙,麻油 2 茶匙
For the broth:
- 1 3/4 litre water
- 2 spring onions trimmed and quartered, 4 slices gingers, 2 cloves garlic crushed
- 2 tbsp fish sauce, 2 tbsp light soy sauce, 2 tbsp white wine
- 2 tsp salt, 2tsp sugar, 2 tsp seasame oil
照燒醬材料:
- 蜂蜜 2 湯匙
- 日本甜米酒味醂 Mirin 2 湯匙 (各大中西超市有售)
- 生抽 (醬油) 2 湯匙
For the teriyaki sauce:
- 2 tbsp honey
- 2 tbsp Mirin ( Japanese sweet rice wine, you can get them from major supermarkets )
- 2 tbsp light soy sauce
方法 Method:
1.) 把清湯材料全部置大鍋中,用大火煮滾後再用小火煮 10 分鐘,把蔥,蒜頭和薑撈起,清
湯用小火燉著。
2.) 把照燒醬材料在小碗中拌勻備用。
1.) Put all the ingredients for the broth in a big pan, bring it to the boil, then simmer over a low heat
for 10 minutes. Discard the spring onions, ginger and garlic, keep the broth on a simmer.
2.) Mix the ingredients for the teriyaki sauce in a small bowl and leave to one side.
3.) 把乾河粉放進大碗中,加入沸水蓋過,浸泡 5 分鐘左右至軟,用筷子間中挑鬆一下。
3.) Put the rice stick noodles in a large bowl, cover with boiling water, leave to soak for 5 minutes
or until just tender. Loosen the noodles with a pair of chopsticks every now and again.
4.) 5 分鐘後傾去熱水,河粉用冷水沖至爽涼,瀝乾備用。
4.) Drain thoroughly and refresh the noodles under cold running water, then leave in a sieve to drain
until ready to use.
5.) 在牛排兩面抹一點油,磨上海鹽黑胡椒末。用中火把間條鍋或平底不沾鍋燒約 1- 2 分鐘
左右至很熱,把牛排放進,每面煎 2 分鐘至半熟,取出,在牛排兩面擦上照燒醬汁,靜置
3 - 4 分鐘。
5.) Lightly rub the steaks with oil, seasoned with salt and black pepper. Heat a griddle or a non-stick
frying pan over a medium heat for 1-2 minutes until very hot, place the steaks in pan and cook
for 2 minutes on each side until medium rare. Remove from the griddle or pan, brush with the
teriyaki sauce and rest for 3 - 4minutes.
6.) 把牛排斜刀切片。
6.) Slice the steaks on the diagonal.
7.) 把河粉放進沸湯中畧熱後馬上撈起,然後分置兩大碗中。
7.) Put the noodles in the simmering broth to warm up slightly then divide the noodles between 2
big bowls.
8.) 把湯加熱,將生菜放入川燙 10 秒左右,排在碗內一旁。把切片牛排放在碗中。
8.) Heat up the soup again and blanch the iceberg lettuce for about 10 seconds, arrange the cooked
vegetables on one side of the bowl, then place the steak slices across the centre of the bowl.
9.) 把沸湯淋在肉和河粉上。
9.) Ladle the hot soup over the beef and the noodles.
10.) 將剩餘照燒醬汁擦在牛肉上。
10.) Brush the remaining teriyaki sauce onto the beef.
11.) 灑上蔥花椒絲,佐以蒜蓉辣椒沾醬,趁熱享用。
11.) Garnish with finely chopped spring onions and chilli, served with some chilli garlic sauce.
Enjoy the noodles while it's hot.
還是有碗您聰明,用牛排肉來做這道吃食。可減省去牛肉腥氣膻味的那道功夫(加薑、蒽、米酒或清酒、高梁酒,沸水滾一滾,去血水及雜質…)這多省時又省事。還是您腦筋動的飛快的。難怪寫食譜書。
