有人耐性地等到芒果奶凍布丁上場了。
正好配合這幾天陽光普照的暖日,氣溫大幅度上升。把做好的奶凍放在冰箱內冷凝。午後工作完畢,大汗淋漓,給送上了一碗,說是涼透心肺,舒爽無比。要求再來一杯,加球雪糕。
我說不能得一想二,好吃的也不能一次吃光,不然明天拿甚麼來做下午茶。
私底下,我卻感激他的提議。愛吃的人,腦筋總是動得靈活。
用雪糕伴西米奶凍,加上香甜的芒果,冰涼清新,必會是道大受歡的消暑甜品。說真的,我可沒想起呢!
次日天氣更熱。帶 Josh 散步回來,泡一壺清茶,把布丁拿出來作早餐算了。
經過一天的期待,每一小口都特別覺得滋味!
之前一天,我是這樣將它們原盅上桌的。
淋了淡奶 evaporated milk,加些芒果粒,放塊草莓片,也是簡單美味。
用芒果弄的美食甜品數之不盡,既然大家都這麼愛吃,一起動手做好了。
芒果椰汁西米奶凍
材料:
( 8 小杯 )
- 中型芒熟果 4 個
- 西米 240g
- 白糖 80g
- 白明膠片 (魚膠片) gelatine leaves 4 塊
- 椰奶 450ml
- 鮮奶 75ml
- 淡奶 75ml
- 草莓、薄荷葉作裝飾用
做法:
- 西米按照包裝指示煲好過冷水瀝乾備用。( 有時也要憑臨場試驗。像我用這隻牌子的快熟西米,上次根指示只煲了 5 分鐘,口感上仍嫌稍硬,今次多煲了 10 分鐘,便軟滑多了)
- 芒果洗淨切開小粒,分兩等份盛起 ( 另一份置冰箱備用,沒放圖中 ),一份用來放進奶凍中去,一份留作裝飾之用。
- 白明膠片 (魚膠片) 放冷水中浸 5 分鐘。小煲內加進椰奶、鮮奶、淡奶和糖用小火煮沸,魚膠片浸軟輕擠去水份後加入沸奶中,繼續用小火煮至完全溶化便熄火,期間要不時攪拌以免聚成黏塊。
- 奶糖魚膠煲好稍涼後加入芒果粒和西米,一起拌勻,盛進容器內,待涼後放進冰箱內冷凝三、四小時便成。
小小提示:
- 魚膠片( 根指示 ) 通常是 4 塊開 600ml 熱液體作 jelly 的。所以上述所有奶液分量加起來剛好 600ml,絕不能有多,否則凝結不成。
- 草莓心片做法很簡單。只須將一顆草莓切去頂部,再直切成三片。每片用利刀在頂方切小 V 形,再略收切成形便可。
吃前將冷凝了的布丁連小碗坐在熱水中一刻 ( 熱水要與碗內的奶凍同高度,但提防不要滲透入內),再用利刀沿碗內邊走一圈,將碟子蓋在小碗上方,小心反扣過來便成。若仍反扣不出,重覆上述方法直至成功。
反轉了的奶凍伴以雪糕、芒果粒、心形草莓片和薄荷葉便可上桌。
也可以原盅淋上鮮忌廉 fresh cream 或淡奶 evaporated milk,加芒果粒,心形草莓片和薄荷葉。

Started working full time combined with newly moved into a new house, took a lot of organizing, also you've only just came back from a long holiday, I don't even know how you can manage it really!!
Go on then, this pudding is so easy to do, and since you've got the gelatine, what better reason to make it at the weekend when you don't have to go to work :p
