芒果椰汁西米露《港式甜品》Mango Sago in Coconut Milk (Hong Kong style desserts)


最近離我們家不遠處開了間很大規模的超級市場 Morrisons。

Morrisons 在英國以營業額統計,佔最受歡迎的超市第四位。
首三位排名分別是 Tesco, Sainsbury's 和 Asda. 第五位是 Co-operative Group, 第六是 Waitrose。

我們一向很少光顧 Morrisons,雖然自從他們於 2005 年收購了Safeway 合併後,已做了很多大規模的改革。但始終是喜歡去 Sainsbury's 和 Asda。喜歡他們貨物的新鮮和選擇的豐富。還很重要的是,每間超市的陳列型式有他們自己的固定設計,無論在那一個地區,走進去後你都會知道甚麼東西放在那兒。

是以這間新的特大的 Morrison's 開張了超過半年,我們還沒涉足過半步。

那天駕單帶 Josh 去離家遠一點的樹林散步,下山時又累又餓。駕車經過,老公馬上掉轉車頭,說我們就在這兒吃早餐好了。

才一進門,馬上眼前一亮!他們的鮮花水果蔬菜部門,是我所見過擁有的種類最繁多,貨品最獨特的超級市場。最難得的是,各式各類的東方瓜果菜蔬,如菜心、白菜、青白蘿蔔、蓮藕、合掌瓜 ...... 等等都琳琅滿目;我簡直不可置信。可惜我當時沒帶相機,用 iphone 拍出來的後果不好。過幾天我再回去,拍些照片來讓大家看看。

這些蘋果芒便是從那兒買回來的。


芒果買時大部份還很青綠。等了一星期,熟透了。我已急不及待的要動手做甜品。


最近網友 Meiko 用她獨特秘方的海綿蛋糕做了個粟子蛋糕 。那蛋糕平滑金黃,我一見傾心。馬上留言為我的讀者拜求食譜。得 Meiko 慷慨私下相贈,還授以秘訣。正要用這些芒果來試做一個芒果蛋糕。  


怎料那人說芒果是他帶我去買的,他要我先做芒果椰汁西米布丁。


我說人家 Meiko 誠意拳拳贈與食譜,我要先做蛋糕!


我倆正爭持不下之際,兒子電話來了。


正好!我們叫他投票。

他說,我記得上次回港時,我們全家都很愛吃那個 Mango sago in coconut milk,為甚麼不先做那款?他打算今晚回家,記著要給他留下一碗。 


聰明的他,輕描淡寫的就平息了一場戰事。

他老爸卻仍心有不甘地說:「鷸蚌相爭,漁人得利!」


怕他囉嗦,我只好答應,西米露做,蛋糕要做,布丁也會做。


芒果椰汁西米露

材料:
( 4 人份 )
  • 椰奶 1 罐約 400 ml 
  • 三花淡奶 Carnation evaporated milk 1 小罐約 170 ml
  • 鮮奶 170 ml
  • 芒果買時連皮連核計算約 1.6kg = 1600g ( 每人 400g )
  • 西米 200g
  • 白糖 80g
  • 裝飾用的生果或香葉隨意。我選了 Physalis 酸漿屬 ( 又稱黃金莓或燈籠果 )和薄荷葉。


做法:
  1. 將糖和鮮奶置小煲內用小火熱溶便即收火,放涼備用。
  2. 西米根據包裝指示煲好沖冷水備用。( 我用這款新西米很好用,只需煮 15 分鐘,過 1 次冷水便成了)
  3. 芒果洗淨抹乾,用利刀在核的兩旁直切下去 ( 要避開硬核 ),在切出的果肉上縱橫割劃開,反起,用利刀或匙羹把丁塊的果肉刮出盛碗中。把4 塊芒果的肉留起作裝飾用,其餘的放進攪拌機內打成果漿。
  4. 大碗內把椰奶、淡奶和糖牛奶同倒進,拌勻。
  5. 甜品碗內,先把芒果漿放底部,然後用匙羹盛進西米,攪鬆拌勻。加入奶露 ( 不要太滿),再完全拌勻,放上小方塊的芒果肉,中間加點裝飾,放入冰箱內至冷凍了才吃。
小小提議:
  1. 如果喜歡口味香濃一點的話,可以不用鮮奶,用鮮奶煮溶白糖的那份奶也可以淡奶代替。
  2. 我這糖的甜味只是恰到好處,喜歡吃較甜的朋友,可以酌量多加白糖。

      不錯!現在真的頗方便,有了這麼多中國蔬菜,有時不需要老遠跑去唐人街才買到,方便很多呢!
      其他種類的蔬菜也夠繁多,作天我買了兩條很大的黃瓜用來炒肉片,香甜得很!

    這道芒果甜品,可真讓我愛到心崁裏了,我愛吃任何一款用芒果做的點心,如果我在現場,也會加入戰局,大叫:三種都要三種都要,哈哈...
    我的香港好友小蜜蜂,是一個很深情的姑娘,水靈靈大眼睛、話不多,但她總是默默付出給我的愛。第一次去香港找她時,她搭了好遠的地鐵帶來了自己做的芒果布甸,喔喔...真是人間美味。她還介紹了來自印度的"阿方索"種芒果,聽說是最好吃的芒果。芒果還總會帶我回到童年,記憶中台灣南部我的老家,大伯父從果園帶回滿簍的芒果,祖母含笑削皮用"大臉盆"裝著,我們一大群孩子圍著吃...四十年過去,台灣愛文芒果甜美依舊,而我的堂兄弟姐妹、我的祖母大伯,都己遠去...

      原來我們都是芒果捧場客,發燒友!說起來芒果甜品種類之多,真是可以做過不停的。
      做完蛋糕後,我還想做芒果糯米磁和芒果 pancake 呢哈哈!
      食物不單止可以連繫親人朋友立間的感情,更能使人追憶懷念故人舊時 ...
      Meiko 你香港的好友待你深情,必定也因為你對她熱誠。人際間的關係和感情是要雙方都珍愛才有延續下去的機會。
      我們年紀愈大,離去的親友也會愈多 ... 盡量愛惜身邊要愛的人(或小動物)好了。
      就如現在,我們才早上 7.10am,已經有一個大男人和一隻小狗兒等著我弄早餐了!

    Did you know I once did a massive assignment on Tesco hahaha so when you were naming the supermarkets in the UK it got me thinking hehe ~ I remember going to the Tesco downstairs near our hotel the last time I went to London! Oh btw London is one of my favourite cities in the world :D Really hope I get to go back to the UK soon and we'd be able to meet in person!

    You still amaze me with your cooking and photography skills ~ I don't know how you make such 'simple' and 'plain' mango sago desserts that we get in any 'tong shui' shop in HK look so PRETTY! I swear it's the prettiest Mango Sago i've seen :D Sighh like i told you Facebook...mangoes aren't in season right now...and pretty dear...and because Mr Bao is allergic...I don't think he'll let me buy mangoes hehe

      You did an assignment on Tesco? Didn't know people in Australia would be interested in a supermarket chain (well, the biggest)in UK! And yes, if you come here again you must let me know, we can have afternoon tea at Ritz London! But that needs 3 months advance booking so please give me enough time :)

      Mangoes are so expensive over here too and not easy to get the type that make good desserts, so whenever I found them and if the price is right, I would go crazy!!

      It's so easy to make, I'm sure you must have done this before. Like you said, these type of desserts served chilled are best for hot weather.
      It's the wettest April for over 100 years here in UK!! We're having really terrible weather at the moment.

      這是很地道的港式甜點,是炎夏的消暑佳品。我做好了都要放冰箱內冷多一回吃覺滋味。沒試過熱吃呢!
