涼拌韓式石頭飯 ( 韓式食品 ) A Cold Serving Bibimbap


我的家人朋友中,幾乎沒有人不喜歡吃韓國石鍋拌飯的。

這道東西方人士都鍾愛的美食,做的方法其實很簡單,也可以百吃不厭。女兒放假回家來了,她問我,為甚麼沒試過自己在家弄的呢?


理由當然很簡單,一來我們沒有那種傳熱迅速,保溫持久的黑陶鍋,也沒有可以上桌用的火爐子。

女兒提議,如果我們先把每樣材料都煮熟了,排放在碗上,吃時才配以醃菜,用醬汁拌勻,相信也行得通。


兩個臭皮匠,勝過諸葛亮。想食的人總是有辦法的。

我們馬上寫下所需的材料,買回來後即刻動手。


石碗飯做好後,鋪上一隻太陽蛋,配點涼拌菠菜、冬筍條、醃菜等。

隨意淋上辣醬和自家調味醬汁,拌勻後吃。唔,那滋味 ... 香甜酸辣都齊,好得不能形容!


真巧上次去超市買下這些即食的酸辣筍絲、木耳炸菜等,味不太濃,作佐料非常適合。


沒有韓式辣醬,自己來調較,用了蒜蓉辣椒醬、豆瓣醬和甜辣醬混合而成。

涼拌韓式石頭飯
( 4 人份)

材料:

韓國米 2 小碗或 400g
冬菇 12 隻洗淨浸軟
芝麻 1 小碗用白鍋烘香
芽菜 50g
紅蘿蔔 2 條切絲
青瓜半條切絲
菠菜份量隨意
醃漬菜隨意
薄西冷牛扒 4 塊
蛋 4 隻

韓式辣醬或自選混合辣醬隨意
自家調味醬汁 







做法:
  1. 米洗淨根據包裝指示或個人經驗去煲成飯。
  2. 洗淨冬茹用 2 湯匙蠔油、1 茶匙糖、1 茶匙麻油,半茶匙鹽、僅浸過冬菇面的水一起煮沸後,改用小火燜 20 分鐘至軟。取出涼後切絲。燜汁可留起下次煮麵時作上湯調味用。
  3. 另一鍋注水,水滾後將芽菜、紅蘿蔔、青瓜和菠菜分次放進川燙至稍軟,即刻取出過冷河,瀝乾。
  4. 每款菜絲分別用少許鹽、糖、麻油、紅醋、烘香芝麻拌勻備用。
  5. 牛排置大碗中,用 1 湯匙橄欖油, 少許 海鹽、黑椒,1 湯匙 黑或紅醋  、1 茶匙 糖 拌勻。平底鍋燒紅,不用下油,把牛排攤開,每邊煎 1 分鐘或隨各人喜愛,盛起,5 分鐘後切成幼條。
  6. 飯分別盛於碗內,把牛排絲和各式菜絲排在飯面,每碗中央鋪上一隻剛熟的太陽蛋便成。


自家調味醬汁

老抽1又2分之1湯匙
生抽 1 茶匙
糖1茶匙
熟油半湯匙

把上述材料拌勻便成




我把做起的一碗飯和一些配菜醬汁用保鮮紙包好,放在冰箱裏。

晚上兒子回來,我端了出來給他冷吃,伴一壺熱菜。他吃得津津有味,讚不絕口。

    聽說石鍋拌飯曾是朝鮮王朝時

      韓國菜在東南亞受歡迎的歷史已很久,想不到今天連在英國出生的中國孩子和各個國藉的年青都對韓式美食非常熱愛。可能就是如你所說,有這麼多種類的小配菜和醬汁,好味又有益!
      是嘛,那真是好進貢呢!還聽說石鍋飯的排設是按照五行的顏色而取材呢,很有意思!

    所以就算沒有石鍋 也能吃拌飯...
    就好像你們的做法一樣呢!

      Thank you for your compliment, not at all!
      My camera is a very old Nikon D70 SLR, about 9 years old now!
      I don't use any lightings at all. The table shoots are usually placed by the window, so it's all natural sunlight; and those preparation photos are done in the kitchen where I have installed a daylight tube on the ceiling, so that I don't have to set up lighting equipment, but not very natural still, I don't like to use it for my finished food shots, only when it was very dark outside.

Ohhh Blogger doesn't like it :( my comment disappeared hehe but doesn't matter ~ just wanted to say :P it might come as a shock but I don't really like Chinese food lol I much prefer Western food like salad and steak or pasta...but Chinese just isn't my favourite ~ I'm always joking with my parents that its because they forced me to eat too much of it as a kid.

    But I really like KOREAN FOOD :) Mr Bao and I were obsessed with it when we went to Korea we basically had 'korean' food for every single meal of ours and only had one or two 'non-korean' cuisine meals lol and bibimbap is one of our favourite ~ because it's got both veggies and some meat woo hoo!

    Haha I can't believe you don't like Chinese food. I suppose when you've lived abroad for so long and in somewhere like Australia, the beautiful weather would just make you desired for something like salad and BBQ type of food ... and all things sweet of course ;p

    It's very hard not to like bibimbap isn't it? So full of goodness and flavour, the colours are lovely and very appetizing too,I love most of the Korean food and in fact most Asian food as well :)

    每天都得煮飯帶便當,腦汁枯竭已經沒什麼靈感,還好有你的種種美食,

      真不可相信,我們這兒雖是春天,卻還是春寒料峭,有時晴朗,有時卻冷到入骨!新聞報導,Derbyshire 作晚竟還下了幾呎深的雪呢!
      這個涼拌飯應該很適合作料理用,冷的醃漬菜肉在較炎熱的季節裏可以吃得很涼快呢!請別客氣,我要去跟你學做麵包才是啊!

  9. I'm getting seriously hungry looking at this. I love this Korean dish! Looks like a lot of condiments to prepare ... think I'll just go down to the Korean eatery to have a bowl. :D Great job, tho!

    Thanks! Haha, I think most young people would be doing and thinking exactly the same as you, and I don't blame them! If I'm not a mother, I would properly go out and eat bibimbap at a restaurant too ;p
