清湯牛肉拉麵 Beef Ramen in a Clear Broth


「暮春三月,江南草長,雜花生樹,群鶯亂飛。」

踏入三月後,我家的草開始長高了,但太濕潤,老公說暫還不能修剪。帶 Josh 去散步,野外的樹木花卉都已有春苗萌芽的跡象。滿天的雀鳥高歌迎春,一切都在告訴我們,寒冬已遠走了。


上週末卻無故刮起一場狂風暴雨,出門遠足的計劃逼著取銷。這幾天都風和日麗,且看明早能否成行。


太陽雖是柔柔的照著,風仍冷。午餐有人說想吃湯麵。



在外國,特別是像我們,離大城市和唐人雜貨店都遠,家裏不時要存有乾貨以應所需。

新鮮麵條沒有,包裝的山西拉麵、米粉等倒有幾包。經驗來說,只要麵、上湯和配料烹煮得好,口味是不遜於城中麵店的。


我愛吃麵,無論中國、日本、越南、韓國等地的形式都愛。煮時更喜歡把各家的方法互相配搭,材料隨心所欲,有清有濃、有淡有辣,看心情而定。

正值春寒料峭之際,來一碗清湯牛肉麵,吃得面燙心暖,你們也有興趣試試嗎?


清湯牛肉
( 2 人份 )


材料:

牛排 2 塊約 400g,里脊 rib eye 或西冷 Sirloin 都可以
乾拉麵 160g
芽菜少許隨意
橄欖油少許
日式照燒醬汁 Teriyaki 3 湯匙
1 3/4 品脫 pint 清湯 ( 做法另述 )
蔥 1 - 2 條切粒
小紅辣椒 1 隻去籽切幼絲
青檸 1 隻
莞茜隨意



做法:
  1. 燒沸一大煲水,先把芽菜放入川燙 20 秒,取出馬上過冷河瀝乾備用。
  2. 把水再燒開,把乾麵條放入,根據包裝指示煮 2 - 3 分鐘或至剛軟,取出過冷河瀝乾備用 。
  3. 煎排鍋 ( 平底或有凹坑都可 )用中火燒至很熱約 1 - 2 分鐘,牛排用鮮磨海鹽、黑椒和橄欖油兩邊塗勻,放進鍋中乾煎,牛排上的橄欖油和本身脂肪已足夠油份。每邊煎 2 - 3 分鐘隨意。取出塗上照燒醬汁,5 分鐘後才切條。
  4. 把清湯煮滾,把麵用大杓子盛進沸湯裏燙一下,即提起分置兩大碗中,把沸湯淋在麵上,用筷子挑鬆麵條,排上牛肉、芽菜、蔥花、辣椒絲和莞茜上桌。青檸另上。
簡易清湯做法:

1.  清水1200 ml,加入白酒4 湯匙, 蔥 2 條,薑數片,蒜頭 2 粒拍扁,白胡椒粉 1 茶匙,五香粉 1 茶匙,煲滾後小火煮 10 分鐘,過篩。

2.  把已過瀘的清湯再煲滾,轉小火,加入蠔油湯匙、鹽茶匙、糖茶匙 ,生抽  2 茶匙 和麻油茶匙;拌勻,試味便成清湯。



有時間的話,可以用豬骨、雞骨和蔬菜熬一大煲上湯,放涼後用容器盛開放進冷藏櫃。要時才拿出解凍,便可以隨時有上湯供應。

  1. YAY :) I have been waiting for this recipe all day ~ The photos look amazing as always Jane :D I'm a noodle fan myself ~ I always prefer to eat noodle over rice. My parents don't understand it but I just don't like 'rice' hehe

    Thank you for being so patient haha! Hope you think your wait is worthwhile :) Oh, yes, please don’t start me on noodles too, I could easily have them 3 times a day!! You’re right, nothing beats an easy but delicious noodle meal, perfect for anytime of the day!

    How's has your weekend been? If you've followed my facebook I've just been eating cake after cakes LOL

    The wait was definitely with it! I've already sent the recipe to Mr Bao and have asked him nicely (demanded) he make them for me when I go back hahaha

    Ohh I just looked at some picture of Josh he's so cute and energetic ! I've never had a pet :( my parents weren't interested hope I get to have my own dog some day!

    I thought YOU are going to do the cooking, not Mr Bao LOL, mind you, it’s always good to see a girl wear the trousers at home, keep it up Daisy, so proud of you :D

    I was a terrible mum, wouldn’t let my children have dogs until my daughter’s final year in high school, now I’m being punished with looking after her dog! May be I shouldn’t have changed my mind :(

      Thank you very much, glad you like it. The vegetable dish behind is made up of celery, bamboo shoots & sweet red pepper lightly blanched, then mixed together with garlic chili sauce, vinegar, sugar & sesame oil; decorated with coriander. I often do this with julienne vegetables as a side dish :)

  10. Jane提供了一個很有效率的做法:把牛排輕烤後刷上照燒醬,切條後再置入湯麵中,就能做出一碗好麵。節省了燉牛肉塊的時間,迅速又美味!我也可以試試!
